With the weather warming up outside and those fun BBQ holidays just around the corner this week we are bringing you a fun lighter recipe to serve at your next get together.  This Walmart Price Match Recipe: Roasted Chicken & Veggie Pasta Salad is so simple to throw together and satisfied the whole family.  Using your favorite vegetables that happen to be on sale this week along with bottled salad dressing that you grab using coupons makes this a super frugal and hearty way to mix up a one dish meal everyone will love.  While we roasted our chicken in the oven for this recipe, others may prefer to grilled or sauté their chicken for a different flavor.  Choose whatever method is preferred by your family.  This recipe is simply a quick and easy throw together meal you can’t beat.

Roasted Chicken & Veggie Pasta Salad

Serves: 6
Ingredients
  • 1 Pound Boneless Skinless Chicken Breast (sliced into 1″ strips)
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1 Package Pasta of Choice (we used elbow macaronie but you can use any variety you prefer)
  • 1 Head Broccoli Chopped
  • 1 Small Red Bell Pepper Chopped
  • 1/3 Cup Sliced Black Olives
  • 1 16-20oz Bottle Italian Salad Dressing
  • Parmesan or Mozzrella Optional
Instructions
  1. Heat oven to 400 degrees
  2. Spray baking sheet with nonstick spray
  3. Lightly season chicken breasts with garlic, slat and pepper on both sides and place in an even layer on baking sheet.
  4. Roast at 400 degrees for 16-18 minutes turning halfway through cook time to evenly brown meat.
  5. Remove from oven, cool and dice into cubes.
  6. Cook Pasta as directed
  7. Drain and mix pasta with diced chicken, broccoli, pepper olives and bottled salad dressing util all ingredients well coated.
  8. Can serve hot or chilled.

We love this meal because it truly ends up being an all in one that can be personalized for our families preferences.  We love using the low fat or fat free “robust” Italian dressings in this salad and often sprinkle the top with a little Parmesan or even Feta for a kick of flavor.  The kids love it because of the bright colors and noodles and of course we just love the fact that this roasted chicken & veggie pasta salad stretches our budgets a bit further.  Nothing feels like summer quite like this tasty dish for our family!
