Easy Greek Chicken

This week we are going to give you a delicious and satisfying recipe to utilize all of those chicken breasts and thighs you can so readily pick up on sale after price matching at Walmart.  Coupled with a few other items that are on sale this week at various stores this Easy Greek Chicken recipe is light and tasty and the perfect filling for your favorite tortilla or pita for a quick and healthy evening meal on the go.

Chicken Breasts – Price Match Albertson’s to $1.69 per pound

Green Leaf Lettuce – Price Match Sprouts to $.99

Roma Tomato – Price Match El Rancho to $.33

EASY GREEK CHICKEN

INGREDIENTS

2 Pounds Chicken Breast or Thighs Cut into 1" chunks

1 Tablespoon Olive Oil

2 Teaspoons Minced Garlic

1 Teaspoon Oregano

1/2 Teaspoon Black Pepper

Juice of 1 Lemon

1 Container Chobani Greek Yogurt (Plain or Vanilla)

1 Can Sliced Black Olives

Green Leaf Lettuce

1 Roma Tomato cut into 1/2" chunks

Pita or Tortilla for wrap

Greek Chicken

DIRECTIONS

In a large skillet heat olive oil.

Place chicken, garlic, oregano and black pepper in heated oil and cook over medium heat for 4-5 minutes.

In a small bowl mix together yogurt and lemon juice.

Pour yogurt mixture into skillet and stir until chicken is coated well.

Cook for an additional 5-6 minutes.

Serve alone with a side of rice or in your favorite tortilla or pita with lettuce, tomato and a sprinkling of black olives.

This Easy Greek Chicken makes a wonderful meal to serve in the Spring and Summer months when you want a satisfying meal but don’t want something that is too heavy.  This is also a meal that can be made for under $5 depending on the brand of tortilla or pita you purchase.  Taking an ordinary chicken breast and turning it into a meal that will become a favorite for the whole family all within your weekly budget.
