As we are getting into the new year, I have been determined to eat more balanced meals. However no matter how much I plan my meals or prepare ahead, I seem to frequently find myself in need of a great tasting, balanced meal that I can prepare quickly. That’s why I try to always have a few STOUFFER’S® FIT KITCHEN™ meals in my freezer that I can make in a hurry. Each meal takes less than 10 minutes to prepare and has a great balance of fat, protein, and carbohydrates.

STOUFFER’S® FIT KITCHEN™ products are delicious and satisfying meals anyone can enjoy and sometimes I like to pair my STOUFFER’S® FIT KITCHEN™ meal with a side dish as well. One of my favorites is my Bacon and Lime Roasted Brussels Sprouts, they are easy to make and can be cooked up in about as much time as the STOUFFER’S® FIT KITCHEN™ meal is in the microwave heating up.
Let me walk you through this tasty recipe and then I’ll include a printable recipe card below.
First up, take about a cup of Brussels Sprouts and cut them in half longways. Also take 2 pieces of bacon and cut them into about 1 inch pieces.
Put a teaspoon on olive oil in a skillet, add bacon and fry for about 5 minutes.
Push bacon to edges of skillet, place Brussels Sprouts cut side down into pan and fry until brown on bottom, about 5 minutes
Squeeze half a lime over the Sprouts
Flip the Sprouts over and cook until brown on bottom, about another 5 minutes
Then throw them on a plate with your STOUFFER’S® FIT KITCHEN™ meal, enjoy a balanced, satisfying meal and get your 2016 off to a great start!
- 1 Cup Brussels Sprouts
- 2 Strips Bacon
- 1/2 Lime
- 1 Tsp Olive Oil
- Salt to Taste
- Cut Brussels Sprouts in half longways
- Cut Bacon into 1 inch strips
- Heat Olive Oil in skillet, add bacon. cook for 5 minutes on medium heat
- Push bacon to side. Add Sprouts cut side down to skillet,, cook until brown, approx 5 minutes
- Squeeze lime over sprouts
- Flip sprouts over, cook until brown on backside, approx 5 minutes
- Salt to taste
